Coconut Barfi Brownies

Ingredients
  

Brownie Base
  • 50 g Dark chocolate (chopped) ¼ cup
  • 130 g Unsalted Butter ½ cup + 1 tbsp
  • 25 g Cocoa powder ¼ cup
  • 100 g Brown Sugar ½ cup
  • A Pinch of salt
  • 3 Eggs (room temperature)
  • 2 tsp Vanilla Extract
  • 75 g All-purpose flour ½ cup + 1 tbsp
  • 50 g Dark chocolate (chopped) ¼ cup
Coconut Barfi Layer
  • 500 ml Milk 2 cups
  • 80 g Powdered Sugar ½ cup + 1 tbsp
  • tsp Cardamom powder
  • 2 cups Coconut (freshly grated/desiccated) ~180g
  • 2 tbsp Ghee 30g
  • 3 tbsp Chopped nuts (almonds, cashews, pistachios)
  • 2 tbsp Chocolate chips (dark/milk)

Method
 

Brownie Base
  1. In a heatproof bowl, melt 50g chopped dark chocolate, 130g butter, and 25g cocoa powder using a double boiler or microwave (20-second bursts). Stir until smooth, then set aside to cool slightly (5–10 minutes).
  2. Whisk in 100g brown sugar, a pinch of salt, 3 eggs, and 2 tsp vanilla until thick and slightly frothy.
  3. Add 75g flour and 50g chopped dark chocolate. Fold gently with a spatula until just combined.
  4. Pour into a lined 8x8-inch pan (with a little overhang) and bake at 180°C/350°F for 22–25 minutes, until a skewer comes out with moist crumbs. Let it cool slightly.
Cook the Barfi Layer
  1. In a pan, boil 500ml milk with 80g powdered sugar and ⅛ tsp cardamom. Once it boils, stir in 2 cups coconut. Cook on medium until all milk evaporates, stirring often. Add 2 tbsp ghee and cook for another 3–4 minutes.
  2. Spread hot coconut mixture over the warm brownie base. Press down evenly.
Garnish & Chill
  1. Sprinkle nuts and chocolate chips on top. Press gently to set. Refrigerate for 2–3 hours. Slice and serve.
