Coconut Barfi Brownies
Ingredients
Method
- In a heatproof bowl, melt 50g chopped dark chocolate, 130g butter, and 25g cocoa powder using a double boiler or microwave (20-second bursts). Stir until smooth, then set aside to cool slightly (5–10 minutes).
- Whisk in 100g brown sugar, a pinch of salt, 3 eggs, and 2 tsp vanilla until thick and slightly frothy.
- Add 75g flour and 50g chopped dark chocolate. Fold gently with a spatula until just combined.
- Pour into a lined 8×8-inch pan (with a little overhang) and bake at 180°C/350°F for 22–25 minutes, until a skewer comes out with moist crumbs. Let it cool slightly.
- In a pan, boil 500ml milk with 80g powdered sugar and ⅛ tsp cardamom. Once it boils, stir in 2 cups coconut. Cook on medium until all milk evaporates, stirring often. Add 2 tbsp ghee and cook for another 3–4 minutes.
- Spread hot coconut mixture over the warm brownie base. Press down evenly.
- Sprinkle nuts and chocolate chips on top. Press gently to set. Refrigerate for 2–3 hours. Slice and serve.
