Strawberry panna cotta is an Italian-inspired dessert that melds the smooth and rich cream with fresh flavours of strawberry. It has a creamy and velvety texture. Strawberry panna cotta is so easy and simple to make, I’m sure this recipe will find a spot on your dessert repertoire.

Classically panna cotta is prepared by dissolving sugar and gelatine in warm cream and then moulded to set.  Normally vanilla is used to aromatize and provide flavour for panna cotta but here I’ve used strawberries. The sweet cream and slightly tart strawberry are a wonderful combination.

Ingredients required to make strawberry panna cotta

Following is a preview list of ingredients, for a detailed list with quantity required, find the recipe card below.

  • Strawberries- I’ve used fresh strawberries. If you are using frozen ones thaw them before using. You will also have to adjust the sugar content.
  • Milk and Heavy Cream – Feel free to use any dairy-free milk and cream if you want.
  • Sugar
  • Agar-Agar- It is a vegetarian gelatine substitute. If you have gelatine at hand you can use that. China grass is also a substitute. Just make sure that whatever you use it should be unflavoured.

How to make Strawberry panna cotta?

Following is a simple instruction list, for detailed instructions, find the recipe card below.

Strawberry puree

  • Form a puree of strawberry by blending strawberry with milk, water, and sugar.
  • Strain the puree into a saucepan.

Blooming agar-agar

  • Add agar-agar into the puree. Whisk till combined.
  • Cook the puree over medium heat till bubbles appear on the sides.

Cooking cream

  • Add the cream to puree and again cook on medium heat till bubbles appear on the sides.

Chill and serve

  • Divide panna cotta among ramekins/moulds. After they cool down place them in the fridge for at least 2-3 hours.
  • To serve, unmould the panna cotta in individual plates. Garnish with melted chocolate or fresh fruits.

tips

  • I’ve used silicone moulds which makes unmoulding easy. If you are using ramekins etc to unmould dip the ramekin in hot water for 3 seconds and then run a knife around the edges.

Storage

The strawberry panna cotta can be stored in the fridge for up to 4 days.

Do not store panna cotta at room temperature or freezer as it may go stale and compromise texture respectively.

Why didn’t my strawberry panna cotta set properly?

Over-blooming or under-blooming the agar-agar/gelatine can result in this. To activate agar-agar needs warm liquid to activate itself. But if the liquid is too warm it can deactivate the agar-agar. Therefore, make sure the liquid never comes to a boil.

And not getting enough setting time can also cause panna cotta to not set properly. Strawberry panna cotta requires at least 2-3 hours to set.

Ingredients
  

  • 200 g Strawberries
  • 50 g Milk ¼ cup
  • 50 g Sugar ¼ cup
  • 50 g Water ¼ cup
  • 160 g Heavy Cream ¾ cup
  • 1 tbsp Agar-Agar

Instructions
 

  • Blend strawberries, milk, sugar, and water to form a puree in a blender or processor.
  • Strain the puree into a medium size saucepan.
  • Add agar-agar into the strained puree. Whisk till well mixed.
  • Cook on medium-low heat till bubbles appear on the sides.
  • Remove from heat and add heavy cream. Whisk till everything is combined. Again cook on medium heat till bubbles appear on sides.
  • Pour the mixture into ramekins/moulds. Let the mixture cool before placing in the refrigerator to set for at least 2-3 hours.
  • Serve with melted chocolate or fresh fruits.

Notes

Notes:-
  1. The mixture should never come to a boil rather it should be taken off the heat when little bubbles at the sides.
  2. Panna cotta at least requires 2-3 hours to set.
  3. It should be covered and refrigerated for up to 4 days.
  4. To unmould dip the ramekin in hot water for three seconds and run a knife along the edges.
