Those who want quick and easy bakes will love these butter cookies. With simple ingredients that you most likely already have in your kitchen you can create this ideal treat which is perfect not only with tea or coffee but also as a festive treat.
Butter cookies have a rich buttery and sweet vanilla flavour. This flavour combination has always struck me as timeless, cozy, and nostalgic.
These delicious butter biscuits are perfectly crunchy around the edges, and completely buttery. They have the perfect amount of sugar and aren’t as sweet as a sugar cookie. However, the flavour is still decadent and will satisfy your sweet desire.
But one of the main reasons I adore butter cookies is their sheer simplicity. The recipe doesn’t call for an extensive list of ingredients. No need for really sophisticated methods or tools. The steps are simple and minimal. Yet, the cookies are very delectable. They can be prepared as festive treats, offered on special occasions, or simply enjoyed on a regular basis.

Make the dough
Cream butter and sugar. Add vanilla, flour, salt, and cornflour. Mix to make a dough.
Chilling the dough
Give a log shape to the dough. Wrap in a plastic wrap/ parchment paper. Chill in refrigerator for at least 1 hour or freeze for 30 minutes.
Shaping the dough
Unwrap the dough. With a sharp knife slice into thin slices. Place it on parchment /butter paper lined baking tray.
Baking and storing
Bake until just golden at the edge. Place on a wire rack after 5 minutes to cool completely. Store in an airtight container.
Is it necessary to chill the dough?
Chilling cookie dough enhances the flavour, improves texture by retaining moisture, makes it easier to handle and work with the dough, and most importantly prevents spreading while baking.
Can I make dough ahead of time?
Absolutely Yes! The dough wrapped in parchment paper/plastic wrap can be stored in refrigerator for 1 week and in freezer for 2 months. Before baking let it sit in room temperature for 15 minutes. Slice with a sharp knife and bake.
How to store cookies?
Once completely cooled store them in an airtight container for up to 1 week. You can also freeze them by storing them in a freezer safe container for 3 months.
