That’s exactly how this Coconut Sponge Cake came to be. I was craving a little more flavour than a plain vanilla sponge but didn’t want to spend hours in the kitchen. Coconut was the perfect answer. It adds a delicate aroma and subtle sweetness without overpowering the cake, making every bite feel light, fresh, and incredibly satisfying.

This cake has everything I love in a good sponge. It’s light and fluffy with a fine, tender crumb that’s neither too dry nor overly moist. How to Make Coconut Sponge Cake

Prepare Your Pan and Oven
  • Preheat your oven to 160°C (320°F). Grease and line a 6-inch round cake pan with parchment paper. Properly lining the pan helps the delicate sponge release easily after baking.
Warm the Eggs and Sugar
  • In a heatproof bowl, combine the room-temperature eggs and sugar. Place the bowl over a saucepan filled with gently simmering water, making sure the bottom of the bowl does not touch the water.
  • Whisk continuously until the sugar has completely dissolved, or the mixture reaches approximately 40°C (104°F). Remove the bowl from the heat.

Tip: The mixture should feel pleasantly warm rather than hot. Heating the eggs helps them whip to a much greater volume, resulting in a lighter sponge.

Warm the Butter Mixture
  • In another small heatproof bowl, combine: butter, coconut milk, & coconut oil. Place this bowl over the warm water while you whip the eggs. Keeping these ingredients warm allows them to blend into the batter without deflating the whipped eggs later.
Whip Until Ribbon Stage
  • Using a hand mixer or stand mixer, beat the warm egg mixture on high speed until it becomes pale, thick, and triples in volume. You’ll know it’s ready when the batter falls in thick ribbons and sits on the surface for a few seconds before slowly disappearing. Mix in the vanilla extract.

Tip: Don’t rush this step. Properly whipped eggs are the secret to achieving an incredibly fluffy sponge.

Fold in the Dry Ingredients
  • Sift in all-purpose flour, cornflour, and salt. Using a spatula, gently fold the flour into the batter. Work slowly using broad folding motions while rotating the bowl. Stop folding as soon as you no longer see streaks of flour.

Tip: Overmixing will knock out the air you’ve worked so hard to incorporate.

Incorporate the Warm Butter Mixture
  • Stir together the warm butter, coconut milk, and coconut oil. Add 3–4 tablespoons of the batter to this warm mixture and gently combine. Now pour this lightened mixture back into the main batter. Fold gently until fully incorporated.

Why this step matters: Adding the fat directly into the batter can cause it to sink to the bottom and deflate the foam. Mixing in a little batter first creates an emulsion, making it much easier to fold everything together while keeping the sponge light and airy.

Bake & Cool
  • Pour the batter into the prepared cake pan. Tap the pan gently on the counter a couple of times to release any large air bubbles.
  • Bake for 25–27 minutes, or until the top springs back lightly when touched, or a skewer inserted into the center comes out clean.

Tip: Avoid opening the oven during the first 20 minutes, as sudden temperature changes can cause the sponge to collapse.

Allow the cake to cool in the pan for about 3–4 minutes. Run a knife around the edge if necessary, then carefully transfer the cake to a wire rack. Cool completely before decorating or storing.

Method
 

  1. Preheat the oven to 160°C (320°F). Grease and line a 6-inch round cake pan with parchment paper.

  5. Beat the warm egg mixture on high speed until it becomes pale, thick, and reaches the ribbon stage. Add the vanilla extract and mix briefly.
  6. Sift together the all-purpose flour, cornflour, and salt.
  7. Fold gently into the whipped eggs using a spatula until no dry flour remains.
  8. Stir together the warm butter mixture.
  9. Mix 3–4 tablespoons of the batter into it, then gently fold it back into the remaining batter. Fold carefully until fully combined.
